Broke student recipes
With the holidays around the corner, food dishes are a must, so why not take the lazy way out? This oven-baked cheesy potato recipe requires patience, a few ingredients and a big stomach.
Ingredients
- 3 Yukon potatoes (serves 4)
- 2/3 cup milk
- 3/4 heavy cream
- 2 cloves garlic (minced)
- 3/4 teaspoon salt
- black pepper
- 3 cups shredded cheddar
Steps
- Preheat the oven to 350F.
- Cut the potatoes into small cubes. If you don’t like the skin of the potato, skin before cutting into cubes.
- Place all of the ingredients into a bowl except for one cup of the shredded cheddar and mix.
- Pour the mix into a three-quart baking dish. Make sure to even-out the potatoes to ensure even cooking.
- Cover the dish with foil and bake for 60 minutes or until the potatoes are tender.
- Remove the foil and add the last cup of cheese on top. Bake until the cheese is golden.
- Let the dish rest for a couple of minutes before serving. Sprinkle parsley on top if desired.
